Caramelized Banana Nut Granola 11/11/2024
From: “Feeling Crunchy in My Birks: The Big Book of Granola”

Ingredients

  • 2 cups rolled oats
  • 1 cup mixed nuts (such as almonds, walnuts, and pecans), chopped
  • 1/2 cup dried bananas, chopped (or 1 ripe banana, mashed)
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar (if using fresh banana)
  • 1/2 cup chocolate chips or butterscotch chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, chopped mixed nuts, salt, and cinnamon. Mix well to combine.
  3. In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until smooth. If using a fresh banana, mash it and add it to this mixture.
  4. Pour the wet ingredients over the dry ingredients and mix until everything is evenly coated.
  5. Spread the granola mixture evenly on the prepared baking sheet.
  6. If using a fresh banana, sprinkle the brown sugar over the top of the granola before baking.
  7. Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  8. Remove the baking sheet from the oven and let the granola cool completely on the sheet.
  9. Once cooled, stir in the dried bananas and chocolate chips or butterscotch chips if using.
  10. Store the caramelized banana nut granola in an airtight container at room temperature for up to two weeks.

News & Thoughts

Welcome to my new project launch! I’m so excited to open the door to a new chapter in my life and new culinary adventures in your life! We are just beginning, but I have so many great plans for The Cookbook Cabinet that include live cooking events on social media, party hosting events where you can earn rewards and free cookbooks, customized on-demand cookbooks for any theme you desire, and so much more. Why did I launch this project? I need to pay rent! Just being honest. We have struggled for so long financially. I needed something to supplement our family income. But if you do what you love, you will never have a job, you will have a vocation. I love finding new recipes, and I love discovering other people’s quirks and eccentricities. We all have that one weird friend who loves to cover everything they eat in mustard…or maple syrup. Or we have a friend who is on the quest for the ultimate cheesecake worthy of satisfying the sweet tooth of Golden Girls everywhere. You have come to the right place. We are based in South Louisiana, the home of all kinds of culinary adventures. Maybe I can design a cookbook just for alligator recipes…hmmm. Maybe not. Please take a moment and sign up for our e-mail list. We will share with you when we add new cookbooks to our collection. Meanwhile, click on the link for ordering above left and browse the 23 cookbooks we currently have available with more coming every day. When you order, the system notifies me, and I will personally e-mail your digital cookbooks to you within 24 hours. Happy culinary adventuring!
